Coffee Souffle Recipe

Preparation time: 15 minutes Cooking time: 15 min Ready: 45 minutes

Original recipe yield 10 servings

• 1 1 / 2 cups brewed coffee
• Milk 1 / 2 cup
• sugar 1 / 2 cup white, divided
Salt • 1 / 4 teaspoon, divided
• an envelope (1 tablespoon) unflavored gelatin
• 3 eggs, separated
• vanilla extract 1 / 2 teaspoon

In a double boiler over simmering water, combine coffee, milk, half sugar, half salt and gelatin. Stir until the solids are dissolved. Stir in remaining sugar and salt and egg yolks. Cook and stir until thick and creamy coat, and the mixture of the back of a metal spoon. Remove from heat.
Whisk the egg whites (with a pinch of salt, if desired) until stiff peaks. Fold the egg whites and vanilla cream cooled slightly. Pour into a serving dish or mold and cold until September
